Can someone please explain to me what exactly the EOS Eversolo Original sampling rate audio engine does? Thanks.

It supposedly bypasses the usual android resampling of amy music stream to 48kHz and thereby allows the stream to come through at its original sampling rate. Incidentally if you want to use upsampling on the A6, you need to turn this EOS feature OFF.

Not sure there is a definitive answer to that question. Some people want to listen at whatever the original sampling rate was on the recording, so EOS on for them. Others like myself like the option of upsampling, so EOS off then. Eversolo say that users may want to turn this feature off if they detect any sound issues, so it may not interact well with all streaming sources. Try it both ways and decide for your own use case.

I upsample flac files to 192 kHz, this is the max that the A6 allows. Some people say there is no audible difference with upsampling, I think there is a slight improvement. You can change the upsampling level via the controller app or the cast as you are playing, so try different settings and see what you prefer. Note that any change to the upsampling rate will take effect on the next track, not the currently playing track which stays at the previous setting, the A6 display will show you what the actual rate is. So EOS off for this, and upsampling only applies to local files e.g. internal or external SSDs, usb drives or NAS network connected drives. A6 does not allow upsampling of any other material e.g. CD playing or streaming services or external digital IN sources.

Unless you use an advanced upsampling application externally my answer is simple: Don't use it. Even then the sound will get colored but that may be to your liking. Discussed in much detail on another topic.

EOS ON obviously brings a lot if you also have HD albums released by original quality sources.
Also CD albums will be played at original 44.1 instead of using Android 48 kHz.
